Camping!

Camping. Not sure what comes to your mind when you hear that word..... What comes to my mind is... Alot of work.. And a little relaxing.

Ok, so i admit camping isn't in my blood.
But, i do try my best to enjoy it while I'm there.....

My favorite parts of camping are-

Hanging out with friends
Eating S'mores
Watching my children having the time of their lives

        Camping is a time for~
Swimming  with friends

Lounging 'cuz you can...

Playing

Cooking food over charcoal

Tending to ouchies

Celebrating birthdays and wearing party hats...

This is what happens when you tell a group of little boys to put their arms around each other for a picture... :)

Camping is also a time for getting plum worn out....

Eating and getting messy

party hats are the coolest thing to him right now....

 Fishing
He loves to fish!!!!!
Today has been a "trying to clean up from camping day".........

Now to fold my nine or so loads of laundry.......

Getting flowers from my very own flower beds makes me happy!!!!!!
Happy week to all........

a little bragging going on here...

Got to say it was quite fun watching my husband cook Sunday lunch for us last weekend. We were gone on Mother's Day, so he did it for me one week later. It was also the weirdest feeling ever to just sit back and let him work away... It would kinda be like me changing the oil in our vehicle. But I'm pretty sure i would feel ten times more "out of it" changing oil then he feels in the kitchen, but anyhow..

He made...
Meatballs
Au-gratin potatoes
Corn
And pulled out rolls from the freezer.

It was a super duper yummy meal. I'm quite proud of the fact that he entered my kitchen domain and whipped up this meal. And the fact that he made me sit down while he cleaned up everything is even better. :)
Thanks Babes for a meal off!:)

the secret revealed...

Here it is folks. The secret to the best, easiest and least floppiest whoopie pies in the whole world. Please take my word for it.

And i need to give credit where credit is due. Thank-you aunt Brenda for letting me in on this secret years ago. :)

They are always soft and moist. They are simple as can be. And there is pretty much no way you can flop them.Unless you get on the phone with a friend and somehow turn off your oven (in the midst of baking) instead of the timer. Then you might flop a couple pans. But only then.

The big secret is-- (drum roll please) A CAKE MIX!!

Yup. If you are a dedicated couponer you can grab the freebie cake mix boxes whenever possible. Or if you are like me grab the cheapest store brand. You mix up the cake mix like it says on the box. Then you add 1-11/2 cup of flour(depends how high and puffy you want your whoopie pies to be)  to the mix. And poof!you are ready to slap them in the pan and begin the baking process. I have a Kitchen Aid mixer and usually do 2 batches at once in it.
I'm thinking i could easily annoy a perfectionist with my "no rhythm" of plopping the cookies however on the pan.

Once you remove them from the oven, transport them carefully to a clean location where they can cool.

I guess i should mention, that before you begin the mixing and baking process...to make your job even more of a breeze.. Mix up the icing first thing and set aside!! Icing recipe will be at the end of this post.

When the cookies are cool.. fill graciously with icing and wrap in saran wrap.
Announce the day as "not going to lose any weight today" day and help yourself to as many as you dare...
Fill your containers and set them in the freezer for later use.
Somebody is excited about whoopie pies!!!
I did three batches and it made around 6 dozen.

Whoopie Pie Icing Recipe
*2 egg whites
4 c. conf. sugar
2 tsp vanilla
1 1/2 c. shortening
4 T. hot water
1 T. flour
Beat egg white till foamy.. then add the other ingred. and beat like crazy! Or till good and creamy!! :)
This recipe is plenty for one batch.

*This egg white recipe it really, really good, but if you are finicky about raw egg whites or are making this for a bake sale.. You may want to consider finding another non egg white recipe!

Last weekend we headed to Ohio to marry off my cousin. This was exciting because it was my first cousin to get married so far!

It was a lovely day. It's always exciting being at weddings that you can tell that God is the center of it.

Here are a few pictures of their special day(the pics are stolen from my brother).

Micheal and Rachelle

They drove away in a really cool car!

Love this one of my niece Kylie!!!
My boy Carter.. Soon time to go with a short hair cut again...:(

Afternoon weddings are "great" for those that still nap the afternoon away...:)

Our own little family..
Carter will be 4 in two months.
Brooklyn is 18 months.
And Curtis and I aren't keeping track of our ages anymore:)

Here we are-- The Gary Smith family...
For those of you that don't know me.. I have an older sister, and a younger brother and sister..:)

The weekend went by fast.. hanging out with my Aunt, Uncle and cousins whom i hardly ever see.. And also trying to squeeze in as much time with this family..

They(my sister and her family) are leaving in a month or so to be missionaries in Canada. Am excited that they get to do this, but we will miss them!!!

Brooklyn playing ring around the rosie with her cousins..
Hope everyone is having a good week.... I'm having to put alot of what i wanted to get done on the back burner and deal instead with a feverish/teething little girl....
Happy Wednesday!!
